1 cup sugar 3 Tbs flour 3 Tbs lemon juice 2 tsp. cinnamon 1/2 tsp. nutmeg
Combine the filling ingredients with enough zucchini to fill the pie pan (with the crust in it already) Cover with top crust (you can buy these in the store pre made-I have my limits on how much time I spend in the kitchen).
Bake at 350 degrees for 1/2 hour and 300 degrees for 1/2 hour.
Serve with cheese (and wine if you wish!)
It tastes like apple pie!

Uh - how's the zucchini prepared? Grated? Chopped? Sliced? Does it matter?
I'm not being a pain (OK, maybe I am) but most of the left-over Zucchini in freezers around here is grated... this would be a great (grate?) way to get rid of the last of it.

If you want it to appear to be apple pie you can cut it in chunks, but grated might work out fine. I never tried it that way!
You're right, I have grated zucchini in my freezer too. I use it for bars and bread.
What kind of a word is zucchini anyway?
